What is a Grease Trap?
Grease traps are used in businesses that do cooking or use harmful chemicals. Grease traps and grease interceptors trap fats, oils and grease (FOG) and separate them from water. Grease traps prevent sewer backups and blockages by keeping fats, oils, chemicals and grease out of the main sewer system.

What is the difference between a grease trap and grease interceptor?
Grease traps have a flow rate of less than 50 gallons per minute.
Grease interceptors have a flow rate of more than 50 gallons per minute.
New Jersey food establishments can have a grease trap located inside the restaurant below the sink or under the kitchen floor.
Restaurants and other businesses that produce a higher volume of fat, oil and grease will have a larger grease interceptor located outside below the ground. An external grease interceptor can have one to three compartments with manhole covers providing access to the traps.
